Anybody colour coded the standard bits before? If so will I need to sand down the skirts and mudflaps to flat off any texture? Doesn't look like I'll need to.

yes

there are plenty of people on here who have done them - use the search button at the top =
regarding the stippling - personal prefrence as to the finish you desire
but "flatting" the surface will mean you can polish them easier whern they are sprayed
