Kev - the 4" oil filler pipe can be removed, just by twisting it as you would the oil filler cap. Then replace the cap directly on to the hole the filler pipe was in.
How many miles ago was the last service? Me personally, I always change the oil when I get a "new" motor. That way at least you know what's in there and you have a reference point from which to work from.

Regarding the temp gauge movement, what temps did it go up to and then back down to?
