I think somebody (AJA), Should get Pudsey a passport that he could use to keep a record of his travels.

Maybe an A4 folder - AKA as Pudsey's Passport...

i'm still not quite sure how the money raising aspect can be addressed though

Nice idea. The plan also will be that a pic is taken at each leg to show where he's been - with a town/city signpost and/or an instantly recognisable landmark.

i'm not quite clear on how this would actually raise money....would the 'sponsors' on each leg donate to the cause, or does pudsey get sponsored for each mile he travels, or how many exchanges are made.

Just simply a total pledge/donation from people/companies for the trip I'd expect. We couldn't really do it on a mile or exchange basis as we have no idea what that will even roughly be, never mind an exact figure like a race/marathon or even John O'Groats to Lands End would be.

Nice one Mark - or we could even make it look like a proper passport - similar front cover and back page (with mugshot, data etc.) with loose pages to add the trip/mileage etc. info.
