The simplest way to wire a power supply socket is to use the cigarette lighter poles, as they're standard 5mm blade connectors. The loom has a dual female blade socket, so you can just unplug it from beneath (just remove the from ash tray, you can also remove the gearstick surround to access the metal frame if you're struggling putting your hand down there) and insert a pair of blade terminal Y splitter wires.
Using a pair of 2 insulated female + 1 male splitters is the safest way, so you can have an ignition key driven +12 power suplly handy for all your needs hidden under the ashtray.
Just plug the male blades into the loom connector, the female ones under the cigarette ligher socket and plug your device into the additional female blade connectors.
The cigarette lighter / accessory socket delivers enough current to power your 12V to 5V converter. It will automatically shut down when you remove the ignition key, so you won't risk to drain the battery flat.
And yes, you can use the trick explained in the topic you linked, as this is only detected and used by your phone to trigger fast charging. The charger itself will just ignore them (the data wires shouldn't even be wired on its side).
Actually, the wires will probably not even be present (there'll be only 2 wires going to pins 1 and 4), so if you intend to shunt pins 2 and 3 as explained, then you'll have to either butcher the femal USB connector so you can short pins 2 and 3), or modify your charging cable.
The latter is probably the easiest way. However, this means this cable won't be able to be used to connect your phone to a computer anymore, so you'll have to reserve it for car charging use only.
