Could be that the buttons or contacts on the stalk need cleaning or the clutch spring switch may need replacing
If you use the search facility at the top of the page, you'll find that this is very, very, very, very, very common on Vectra Cs. I'd almost go as far as saying that a Vectra C that's covered 50,000 miles without the cruise control turning itself off every now and then is extremely rare.
The most common reason (looking at the posts on here) is dirty or loose contacts in the stalk itself. If you put cruise on, then gently move the stalk around (not enough to indicate or flash the headlights) and it turns off, then this is the most likely cause. There are dozens of posts with photos of how to remove the stalk and clean or bend the contacts to correct this. If it's not the stalk then the next place to look is the clutch spring as John says - again, this is covered well on here, just use the search facility...
