I'm sure you can use your driving license for a trip like this, as long as its the photo version and in date?

You will go through passport control, in BOTH directions, and you need to be able to produce one if asked to.

Passports are there to show that you are permitted to travel. In your instance, it will show that you are not a South American / Cuban / Russian etc. It is more about proving who you are not, rather than proving who you are in terms of citizenship.

Yes, it makes a difference on the mode of transport
As you are travelling by Eurostar, you will be allowed to travel so long as the passport is valid on the outward portion AND you have return tickets
If you only have single tickets, then it MUST be valid for at least 6 months
