I understood they are designed to hold onto the revs to make the gear change easier?

It is supposedly a design of the software to ease gear change and also burn of all fuel before its goes into the cat??

Otherwise, how do I stop it?? Its really annoying.

Hi Kevin, I have a 2003 1.8 Club. Had similar probs. Found that the throttle body needed a clean with carb cleaner particularly where the small air bleed tube fits, mine was blocked solid and needed a pin to clear it. Same with the Cruise Control. Lay down in the drive side footwell and see if you have a large spring with a white plastic bit either end, on the clutch pedal, mine didn't but put one on and now perfect. As a check put your foot under the clutch pedal and lift it up and put CC on, if it stays on, you need that spring.
    Good Luck. Nigel
    Look at this in How2s

I did mine but didn't need to remove anything just a bit fiddly and awkward..
