If you just want him not to be able to start the car then you can have that key removed from the car's system with Tech 2 so that it can't turn off the immobilser. It then won't open the doors and turn off the immobilser from the key fob. He'll still be able to physically open the door with the key in the door, but that will set off the alarm, for what it's worth as it's so quiet!, but he won't be able to turn off the alarm/immobilser by putting the key into the ignition either if that key has been removed from the car's system.

If you don't want him to even be able to unlock the car then I don't know the price for a full lock/key change but it'll be a fair bit I imagine.

Why not just change the door lock and get a pair of the emergency keys that vx sell. You only need the physical lock if the battery goes flat or the remote stops working and as Duncan said get the other keys coded so that only they will start the car/open the doors via remote

Does it matter? Is it relevant?

You could get a full lockset second hand on ebay with keys, but you'd still have to get a Tech2 session to erase the missing key off the BC.

Probably easier to get the key off him? Maybe if it was criminal activity that got the key, the Police may be able to help?

I'm guessing that's out of the question, since the OP wants to replace the locks rather than speak to him?
