If your old radiator was corroded, you may have shifted a load of muck out into the cooling system that's now holding the thermostat slightly open. Might be worth taking the thermostat off, cleaning it up and testing it in a pan of hot water to see if it opens and shuts properly.
My 1.8 had a new thermostat in February, and it's sitting just below 80C a lot of the time when it's under 2C outside and I'm doing 60mph. It does go up to 85C if I'm stuck in traffic after a run though. But in the summer it was moving around up to 90C if I sat in traffic, and down to 80C if I'm moving. So I'm wondering if mine's slightly sticking now too - or whether the 1.8's cooling system does just vary in temperature a lot like that normally!
