Does anyone know what this means? Im looking at a new head unit, and it say's steering wheel controls will only work with analog signal.

Analogue is where it works by resistance rather than can-bus signals as far as I know. I don't know if the half can vectra is like this or not.
However even if you car is can-bus you can buy a steering adapter to convert the signals into analogue.
Jus like mucklestone said, may need a canbus to analog convertor to convert the signal.
Analog signal means, in some old cars have steering wheel control wired directly to the radio.
In vectra, steering wheel controls is analog, but it was converted to digital in canbus then broadcast to other modules, e.g. screen. So in this case you can name it digital.
Some canbus compatible unit should work with your control.
