Computer Help Please

So every now and again the computer reverts back to the original windows screen with the green hill , no icons etc .... after a system restore it all goes back to normal set up the way i have it

Now i dont mind formatting and re-installing everything as it could do with a clean ,but all my emails are in outlook 2007, i dont want to lose them, is there a way to back these up maybe using the .PST file or something else, so i can restore after the format ?
