Vauxhall quote 20k as the service interval, but I personally think that's too long to leave the same oil in the engine. I change the oil at least every 10k on my cars. Going 1k over the service schedule won't make enough difference to worry about.
80k sounds about right for the cambelt, but if you are paranoid like me you might want to get it done every 60k.
Vauxhall list that the timing belt interval is 100k on the cdti's but i'd never leave a belt that long, 60-70k tops, as for the servicing i do the oil and filter every 6k and the rest every other oil and filter change (12k).
As a 2005 your car is probably out of warranty, unless you have bought the car recently
If the car is under any type of warranty then you are allowed up to 500 miles beyond the previous service
Equally, if the cambelt fails prematurely out of warranty then providing it has been fully serviced by VX they will normally pay an amount towards any repair costs
If the car has not been serviced by VX or is not covered by any warranty then you can use any service schedule you like
As above, most people cut it from 20K miles to 10K miles
Equally, cut the cambelt change from 80K miles to 60K miles (note on some engines VX normally cuts this original interval in half and I always do that for any VX engine)
1000 miles over last service won't damage the engine, but it won't do it any good, the oil will simply be saturated in contaminants
Eventually it will become acidic and attack the metal (usually the liners)
In the interim get at least an oil and filter change
You can (should be able to) change the pollen and air filter yourself
That then just leaves the suspension and steering to check
I'm at 86000. Not going to have the cambelt changed until 99000 (November) - recommended interval is every 100K for the CDTI. I'm pretty confident the belt will be fine (touch wood). I'll update you if it changes, but from my experience cambelts usually last much longer than the manufacturer recommends.
As for oil, I do around 28K miles per year so I think that once a year every 20k will also be fine as per the manufacturer's recommendation, but then I do mainly motorway miles. Last service was 5K ago and the oil's still a nice colour. Every 6K seems a bit 'extreme' to me. :-)

the pink fluid mine is quite low could that have anything to do with the car heating up to 85c when in traffic the odd time cause its very warm when i take the cap off

You shouldn't be taking off the coolant reservoir cap (large yellow one)
The only time you should need to remove it is when the engine is COLD and it needs checking or topping up
With the car cold and level, there is a mark on it "KALT" and an arrow
The liquid should be perfectly level with that arrow
The liquid is typically 50% coolant and 50% water, so if you need to topup try not to use water only
85'C in standing traffic is quite normal
Equally, after a short drive and then coming to a stop the engine temperature will rise and the cooling fan may activate
I'd be more worried if the gauge went about 90'C and/or the cooling fan didn't come on (not to be confused with the air con fan)
When checking the oil, run the engine for a few minutes, then switch off, allow it to cool, and for the oil to settle
Use any synthetic oil; TESCO do two litre bottles for about £6
pretty confident doesn't fill me with confidence. I'll never understand why people do not keep on top of simple things on what is probably the second most expensive thing they own!
Its not just that the belt could snap there is other factors like the tensioner. Its like playing roulette with your car. Not for me lol.
